Ingredients (Serves 2)
- 200g spaghetti
- 4–5 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- Pinch of red chili flakes
- Salt (for pasta water)
- Fresh parsley, chopped (optional)
Method
- Bring a pot of salted water to boil and cook spaghetti until al dente.
- While pasta cooks, warm the olive oil in a pan over medium heat.
- Add garlic and chili flakes, cook gently until garlic turns light golden (don’t burn).
- Drain pasta, reserving some pasta water.
- Add pasta to the oil mixture off heat; toss to coat evenly.
- If dry, loosen with a splash of pasta water.
- Finish with parsley and serve immediately.
