Spaghetti Aglio e Olio

Ingredients (Serves 2)

  • 200g spaghetti
  • 4–5 cloves garlic, thinly sliced
  • 60ml extra virgin olive oil
  • Pinch of red chili flakes
  • Salt (for pasta water)
  • Fresh parsley, chopped (optional)

Method

  1. Bring a pot of salted water to boil and cook spaghetti until al dente.
  2. While pasta cooks, warm the olive oil in a pan over medium heat.
  3. Add garlic and chili flakes, cook gently until garlic turns light golden (don’t burn).
  4. Drain pasta, reserving some pasta water.
  5. Add pasta to the oil mixture off heat; toss to coat evenly.
  6. If dry, loosen with a splash of pasta water.
  7. Finish with parsley and serve immediately.
