Chicken Tikka Masala

Ingredients (Serves 3–4)

  • 500g chicken breast or thigh
  • Yogurt & lemon juice for marinade
  • Garam masala, cumin, coriander
  • Tomato puree
  • Butter & cream
  • Ginger & garlic paste
  • Salt & freshly cracked pepper

Method

  1. Marinate chicken in yogurt, spices, and lemon juice for at least 1 hour.
  2. Grill or pan-fry chicken until cooked through.
  3. Prepare tomato-butter sauce with spices and ginger-garlic paste.
  4. Add cooked chicken to sauce and simmer briefly.
  5. Finish with cream and garnish with fresh coriander.
  6. Serve hot with naan or rice.
